Jack Skellington Pumpkin Soup

The spooky season is upon us! So it's only fitting to give some kind of credit to the Pumpkin King. Tuck into the delicious, and nutritious, pumpkin soup served in a pumpkin bowl.

Enjoy this yummy pumpkin soup this Halloween season whilst watching The Nightmare Before Christmas! (or is this a Christmas movie... that is the question...).
Jack Skellington Pumpkin Soup
Before you start cooking, we highly recommend playing your favourite spooky playlist or listening to The Nightmare before Christmas soundtrack.

Ingredients
1 Carrot
1 Onion (white or purple- your choice!)
1 Potato
450g Pumpkin (about a medium pumpkin)
500ml Vegetable (or chicken) Stock
20g Butter
Chilli flakes (if you want a kick!)
Salt & Pepper
80ml Cream
Pumpkin Seeds (to garnish)
Method
Chop the carrot & potato into chunks. For the onion, slice & dice.
Using a knife, carefully & slowly remove the top of the pumpkin (as shown in picture above). If you are young, ask your parents or an adult for this step :)
Get a spoon, or use your hands, and start scooping out the pumpkin guts. This is all the seedy bits (not the skin yet!).
Once all the guts are removed, start to scrape at the flesh of the pumpkin until you have around 450g of pumpkin. Be careful not to pierce through the outer layer!
Boil a kettle & add in your stock cube to make around 500ml of stock.
Add your butter to a large pan. Once melted, add in all the veg over a medium heat for about 6 minutes whilst stirring.
Add your stock to the pan and add in some salt & pepper (also some chilli flakes if you want a kick!). Let this simmer for about 20 minutes so the veg becomes nice and soft.
Take your pan off the heat and using a hand blender, blitz up the soup to make it nice and smooth.
Return your pan to a low-medium heat and add in your cream, stirring it through.
In a small frying pan, add in some pumpkin seeds until the turn slightly brown.
Take your soup off the heat and carefully pour into your pumpkin. Add the pumpkin seeds on top as garnish. Put the pumpkin lid back on to keep the soup warm.

And there we have it, pumpkin soup in a pumpkin bowl! To add a spooky element, grab a black sharpie and draw on a spooky face to the pumpkin bowl.
