“ Someday my prince will come. Someday we'll meet again. And away to his castle we'll go, To be happy forever I know. Someday when spring is here, We'll find our love anew. And the birds will sing and wedding bells will ring, Someday when my dreams come true ” - Snow White
SNOW WHITE'S TO-DIE-FOR APPLE PIE
Before you start baking, we recommend putting your favourite tunes on and getting into a Snow White vibe!
INGREDIENTS:
For the Pastry:
500g plain flour
pinch of salt
280g chilled butter
3 egg yolks
6 tsp caster sugar
6 tbsp cool water
Extra Flour to Dust
For the Filling:
7 Delicious Granny Smith Apples
75g Caster Sugar (Or more, depending on how sweet you want your pie!)
1 tsp Ground Cinnamon (If you love cinnamon add more... like we do!)
2 tbsp Plain Flour
METHOD FOR PASTRY:
If making your own pastry, sift the flour and salt into your bowl.
Cut the butter into tiny cubes.
Put butter into flour and rub in using your finger tips until it becomes flaky. Avoid using the palms of your hand as it will melt the butter.
Give your bowl a good shake to bring up any pesky chunks of butter that survived. Then rub those into the flour.
Add the sugar to the flour mix and give it a stir.
In a separate bowl, mix your egg yolks and water.
Pour this in a little at a time and mix with a spoon till your flour mix until it clumps up. (dont worry if you don't use all the egg mixture!). Then finish off by using your hands gently to bring the pastry together.
Make your pastry into 2 flat round shapes. Wrap one of these in cling film and put in fridge (this will be for the top of the pie!).
Use the other pastry circle to line your pie tin. You may need to roll this out to fit all of your pie tin. Trim the edges of your tin so it is all neat (save this for later as decoration!). Cover in cling film and put in fridge for around 45 mins.
METHOD FOR YUMMY FILLING & PIE.
Turn oven onto 190ºC.
Peel and core all the apples then cut them into slices.
Put apples in a bowl and sprinkle with the sugar and cinnamon. Then sift flour over the apples and mix together.
Grab your pie tin from the fridge and fill with the apple mixture.
Get your pastry lid from the fridge. Brush a little water on the edges of the pie crust to help glue the lid and pie crust together. Press the edges to seal.
Using a fork to crimple the edges (Just like the birds in the movie!).
Make a little hole in the centre of the pie, to let out steam, and decorate - Use the left over trimmings to spell out Grumpy on top for an authentic Snow White Pie! The trimmings should be rolled very thinly, and stuck to the top of the pie with a little water.
Bake in oven for 40mins or until golden. to cook the bottom pastry before the top browns too much. Remove from the oven. Allow to cool slightly then serve!
Enjoy with your favourite topping, whether thats custard, cream, or maybe even a scoop of vanilla ice-cream!
